About the Recipe
I literally cut my teeth on onions and still love them to this day. It took me a while to get Scott to love them as much as I do and now he is addicted. If you enjoy onions then you are gonna love this recipe.

Ingredients
1 Large Vidalia Onion
3 Eggs
Cooked Bacon or Deli Ham
Cheddar or Monterey Jack Cheese
Salt, Black Pepper and Cayenne Pepper

Preparation
Step 1
Peel a large Vidalia Onion, then cut it in half so that the rings stay intact. Carefully remove the outer 2 rings and set aside. Dice the remainder of the onion. Crack and whisk 3 eggs into a medium size bowl. Add meat, diced onion, salt, black pepper and cayenne pepper to the bowl and stir. Cut thin slices of your choice of cheese and set aside.
Step 2
In skillet on medium heat, melt butter and coat the bottom of the skillet. Add the onion rings with the smaller hole on the bottom so the ring is shaped like a bowl in the pan. Once the onion begins cooking add just a little more butter to the middle of the onion before adding the egg mixture. Spoon in your egg mixture evenly distributing between the 4 onion rings. Reduce the heat and cover with a lid. After a couple of minutes open the lid to see if the egg is solidifying. Once you can tell the egg is firming then flip the ring carefully so that the egg stays in the ring. Add cheese to the top of the egg that should be lightly browned. Put the lid back on and remove it from the heat until the cheese melts completely.
Step 3
You are now ready to remove and serve. A large glass of OJ goes great with this onion omelette, but if you are like me, a second cup of coffee is also great option.Â
